Fro Yeo Bark

This protein-rich snack is perfect for a midday refuel

Ingredients

1 tub of Super Thick Kerned Yogurt

Handful of summer berries

6 mint leaves

1 tbsp pomegranate seeds

1 tbsp of orange zest

1 tbsp pistachios, shelled

1 tbsp of honey

Pinch of edible flowers – borage, rose, calendula or nasturtium

Method

  1. Start by spreading out your yogurt on a lined baking tray approximately 20cm X 30cm. Try to get it fairly even in thickness.
  2. Arrange all your colourful toppings on the surface of your yogurt and gently push larger pieces of fruit into the yogurt. Drizzle with honey and sprinkle with edible flowers, berries, nuts, mint and zest.
  3. Place the tray into the freezer, so that the yogurt is sitting securely flat for freezing and leave for at least 3-4 hours.
  4. Remove from the freezer and break your yogurt bark into shards and serve to hungry helpers.
