Lemon Curd Fool

Ingredients

350g lemon curd
350g Yeo Valley Greek Natural yogurt
500g double cream
2 lemons
100g sugar

Method

1.Whip the cream with the sugar and when nearly at full peak, add the juice and zest of the lemons and the yogurt. Whisk a little more if necessary.

2.Now place into a piping bag. Put the lemon curd into a piping bag also.

3.Now alternate piping the lemon curd followed by the fool mixture into suitable glasses.

4.You can top this off with ginger poached rhubarb or crushed ginger biscuits or both!
