Plum Eton Mess

This lovely pud is a great twist on a classic and makes perfect use of our latest limited edition…

300g ripe plums

50g sugar

1 tbsp water

450g Yeo Valley Limited Edition Yummy Plummy yogurt

4 meringue nests


  1. Stone your plums and cut them into quarters then pop them in a pan with the sugar and water. Cover and simmer for 10 minutes until they’re soft.
  2. With a hand blender or potato masher, blend your hot plums into a rough, thick texture then leave to cool.
  3. Break up your meringues by hand and place them into 4 individual glasses, layering them with your cooled plums and yogurt (make your first layer meringue).
  4. Serve it straight away for the tastiest results.
