Healthier Tiramisu made with Yeo Valley Organic Super Thick yogurt

Super Thick Yogurt Tiramisu

A Super Thick twist on this super delicious classic!

Ingredients

150ml strong coffee

300g Yeo Valley Super Thick yogurt

50g icing sugar

250ml Yeo Valley double cream

1/4 tsp vanilla extract 

120g savoiardi cookies (ladyfingers)

Chocolate flakes (try grating chocolate) or cocoa powder to taste

Method

  1. Start by preparing the coffee then set aside to cool.
  2. Place the yogurt into a large bowl, add the sifted icing sugar then combine.
  3. Slowly pour in the double cream and the vanilla extract and then beat until the mixture has thickened and is airy and soft.
  4. Break the ladyfingers in half and soak them, 2 at at a time, in the coffee mixture until they are soaked but not soggy, then lay them inside the bowls creating the first layer of your tiramisu
  5. Spoon over a little of the yogurt mixture, some chocolate flakes or cocoa powder and repeat the layering until the bowl is full, finishing with the yogurt layer.
  6. Finish with some chocolate flakes and then serve!
