From garden greens to gooey mozzarella, these easy pizza flatbreads can be your new go-to.

Method

  1. To cook your pizza flatbreads, you can use a pizza oven or a regular oven. You can also cook the flatbreads in a hot pan and then add the toppings as we do with the garden greens pizza.

  2. If your making the garden greens pizza, first prepare your toppings, slice your courgette either into thin ribbons or rounds, then fry in a hot pan with some oil for a few minutes until golden and starting to crisp, turning halfway and set aside. Cook your broad beans in a pan of boiling water for a few minutes, then drain and rinse under cold water. Remove the beans from their shells and set aside.

  3. To make the pizza flatbreads, in a large bowl, combine the flour, salt, and baking powder. Make a well in the middle and add your yogurt and oil. Mix together initially with a spoon, then use your hands to bring together to form a dough.

  4. Divide your dough into 4 balls and then, using a rolling pin, roll out until it’s about 5 mm thick.

  5. To cook the flatbread for the garden greens pizza, simply place it in a pan over medium to high heat and cook for a few minutes on each side. The flatbread will be slightly risen and start to turn golden in places once cooked. To top, spread a few spoonful’s of the crème fraiche as a base, followed by the courgette strips and broad beans. Sprinkle with chopped mint and drizzle with oil to finish.

  6. If you are making a margherita before cooking your pizza, spread a little of your passata on the uncooked base, top with bits of torn mozzarella and basil. Place the pizza in your preheated oven for 10-12 minutes until cooked.
