
Christmas Muffins
These lovely, moist muffins are real crowd pleasers. Packed with warming, Christmassy spices, tangy cranberries and a nice dollop of our Natural Yogurt, they’re delicious and a doddle to make.
Ingredients
250g (9 oz) plain flour
100 g (3½ oz) caster sugar
2½ tsp baking powder
½ tsp bicarbonate of soda
2 tsp ground cinnamon
2 tsp ground nutmeg
2 oranges, zest and juice
1 tsp mixed spice
200 ml (7oz) Yeo Valley Natural Yogurt
75ml (2½ oz) vegetable oil
1 egg
175g (6oz) dried cranberries
Method
- Preheat oven to 170°C and line a muffin tin with 12 cases.
- Combine all dried ingredients, including orange zest. Mix all wet ingredients together and stir into the dry mix.
- Divide into the paper cases and bake for about 20 mins. Leave to cool.
