Christmas Muffins

These lovely, moist muffins are real crowd pleasers. Packed with warming, Christmassy spices, tangy cranberries and a nice dollop of our Natural Yogurt, they’re delicious and a doddle to make.

Ingredients

250g (9 oz) plain flour

100 g (3½ oz) caster sugar

2½ tsp baking powder

½ tsp bicarbonate of soda

2 tsp ground cinnamon

2 tsp ground nutmeg

2 oranges, zest and juice

1 tsp mixed spice

200 ml (7oz) Yeo Valley Natural Yogurt

75ml (2½ oz) vegetable oil

1 egg

175g (6oz) dried cranberries

Method

  1. Preheat oven to 170°C and line a muffin tin with 12 cases.
  2. Combine all dried ingredients, including orange zest. Mix all wet ingredients together and stir into the dry mix.
  3. Divide into the paper cases and bake for about 20 mins. Leave to cool.
