
Panettone Apricot Bread and Butter Pudding
Panettone is one of our favourite festive treats so we love this recipe for a Christmassy pud – very tasty and a great way to use up any panettone leftovers!
Ingredients
500g panettone
100ml whole milk
300ml double cream
5 eggs
75g brown sugar
Nutmeg
A handful of dried apricots (chopped)
1/2 tsp nutmeg
Method
- Cut the panettone into wedges and place in a litre dish
- Mix the eggs and sugar until the sugar is dissolved then add the milk and cream and stir well.
- Pour over panettone and leave to soak for 10 mins.
- Sprinkle the apricots and nutmeg over the pudding before baking in the oven at 170C/gas mark 3 for approx 50 mins, until mixture has set and is brown.
- Serve and enjoy!
