Delightfully spooky spider cupcakes the whole family will love!

Ingredients

Ingredients:

200g plain flour

110g Yeo Valley Unsalted Butter

2 large eggs

2 tsp baking powder

3 tbsp Organic Coco powder

3 small or 2 medium pears, peeled and cut into 1 cm cubes

100g Yeo Valley Natural Yogurt

100g soft brown sugar

1 tsp vanilla extract

Chocolate Butter Icing:

100g Yeo Valley Organic unsalted butter (at room temperature)

100g Good quality dark chocolate

100g Icing sugar

Yeo Valley Organic Whole Milk is needed to loosen

Decoration:

Dark Chocolate melted

Pretzel sticks

Googly eyes (you can pick these up in most supermarkets, or alternatively, you can use white chocolate or raisins)

Method

1. Preheat your oven to 180°C fan. Prepare a cupcake tray with 12 cupcake cases

2. Cream together the butter and sugar until pale, add the flour, baking powder, cocoa powder, eggs, and vanilla extract and combine. Using a spoon, fold through the yogurt and chopped pear.

3. Spoon mixture into your cases and bake in your preheated oven for 12-15 minutes until risen and cooked through.

4. Remove from the oven and place on a wire rack to cool. Meanwhile, prepare your icing. Melt your chocolate either over a Bain-marie or in short blasts in the microwave. Allow to cool slightly.

5. In another bowl, beat together your butter and icing sugar, then fold through your melted chocolate. If too thick, loosen with a dash of milk. Once your cakes are completely cool, they are ready to be iced.

6. To make the spider legs, line a baking sheet with some baking paper, coat your pretzel sticks with the melted chocolate, then stick two of the coated pretzel sticks together using the melted chocolate and lay them flat on the baking tray. Repeat this for however many legs you want to make. You will then need to place the baking tray in the fridge to set the chocolate. Once set, you can then stick the legs into the iced cakes along with the eyes to create your spiders!
