These soft and savoury fritters are a fantastic family-friendly recipe, perfect for little ones starting their weaning journey. They offer a delicious way to introduce vegetables and new textures while encouraging self-feeding. Quick to prepare and easy to adapt for the whole family, they're ideal for lunch, dinner or a nutritious snack.
Ingredients
½ courgette, grated
60g peas
50g Yeo Valley Cheddar Cheese, grated
3 tablespoons of plain flour
1 large egg
Olive oil
Serving suggestions:
For little ones, serve with a Little Yeos Greek Style Natural Yogurt Pot as a dip.
For adults, top with a fried egg, crumbled feta and a sprinkle of chilli flakes.
For an on-the-go option, pair with a Little Yeos Greek Style Yogurt Pouch.
Method
1. Place the grated courgette, peas, cheese, flour and egg in a mixing bowl and stir until well combined.
2. Heat a small amount of olive oil in a frying pan over a medium heat.
3. Spoon portions of the mixture into the pan, gently flattening each fritter.
4. Cook for 2 to 3 minutes on each side, or until golden brown and cooked through.
Weaning Tips: Cut the fritters into finger-sized strips for younger babies to grasp easily. Serve with a spoonful of yogurt for dipping and, as your baby progresses, experiment with different shapes and textures to help build feeding confidence.
