Mandarin and passionfruit breakfast loaf cake

An indulgent alternative to breakfast, full of summer flavours.
Ingredients
3 Eggs
300g Organic Cane Sugar
130g Yeo Valley Organic Unsalted Butter
245g Yeo Valley Organic Greek Style Passionfruit & Mandarin Yogurt
400g Plain Flour
15g Baking Powder
Zest of 1 Lemon
Zest of 1 Orange
Pinch of Salt
Method
1. Preheat the oven to 160°C/gas mark 3.
2. Whisk the eggs with the sugar until pale. Add the butter and yogurt and stir to mix.
3. Sift in the flour, baking powder and stir in the zested peel of one orange and one lemon, alongside a pinch of salt.
4. Butter and dust with flour a 2lb loaf tin, scrape the batter into the tin and bake for about 30 minutes until golden and dry inside. Use a toothpick to test if it is dry inside.
5. Serve with fresh passionfruit pulp and mandarin slices, with lashing of our scrumptious Passionfruit and Mandarin Greek Yogurt.
