Meringue Traybake With Pears, Chocolate And Yogurt Cream

Imagine a dessert that makes everyone pause mid-conversation: crisp meringue topped with silky yogurt cream, tender poached pears and a drizzle of dark chocolate. This traybake looks like you spent hours in the kitchen, but here's the secret - it's surprisingly simple to put together. Perfect for those festive gatherings when you want to impress but don't want to miss the party.Â
Ingredients
4 egg whites Â
250g caster sugar Â
2 tsp cornflour Â
2 tsp white wine vinegarÂ
Poached pears:Â
4 pears Â
1 tbsp caster sugar Â
200ml waterÂ
½ tsp ground cinnamon Â
Yogurt cream:Â
 To top:Â
150g of melted dark chocolate Â
A handful of chopped roasted walnuts Â
Method
Preheat the oven to 180°C (fan) and line a 25x30 cm baking tray with baking paper.  Â
Whisk the egg whites until stiff peaks, then gradually add the sugar a tablespoon at a time until glossy. Fold in the cornflour and vinegar using a metal spoon. Â
Spread on your tray, put in the oven, and immediately reduce the temperature to 150°C (fan) and bake for 45 minutes. Â
Meanwhile, make your pears. Peel and slice them, then simmer gently in a pan with 200ml water, sugar, and cinnamon for 20 minutes until tender. Set aside to cool.Â
For the cream, whisk until just thickened, then fold in your Greek Recipe yogurt. Â
Once everything’s completely cool, layer it up: spread the yogurt cream over the meringue, arrange the pears on top, and then finish with a chocolate drizzle and scattered walnuts. Â
