
Mince Pie Chocolate Brownies
Add a sprinkle of festive cheer to your afternoon of baking thanks to these ooegy, gooey chocolate brownies with a Christmas twist!
Ingredients
Mince Pie Brownies
- 225g Dark Chocolate (180g)
- 180g Unsalted Butter
- 200g Caster Sugar
- 60g Dark Brown Sugar
- 3 Eggs
- 100g Plain Flour
- 50g Cocoa Powder
- 3 Mince Pies
Icing
- 50g White Chocolate
- 25g Double Cream
Method
- Pre-heat the oven to 160°C and line a square baking dish with greaseproof paper
- Melt the chocolate and butter in a bain-marie (bowl set over a pan of steaming water)
- Whisk the eggs and sugar for 5-8 minutes until mousse like
- Fold through the melted chocolate
- Fold through the flour and cocoa powder
- Add the brownie mix to the lined baking dish
- Quarter the mince pies and add to the top of the brownies
- Bake in the oven for 25 minutes until cooked on the top but a slight wobble still as it comes out of the oven
- Heat the cream in a small sauce pan; once the cream is hot, stir in the white chocolate
- When the brownies are cool, drizzle with the white chocolate ganacheover them
