Mince Pie Chocolate Brownies

Add a sprinkle of festive cheer to your afternoon of baking thanks to these ooegy, gooey chocolate brownies with a Christmas twist!

Ingredients

Mince Pie Brownies

  • 225g Dark Chocolate (180g)
  • 180g Unsalted Butter
  • 200g Caster Sugar
  • 60g Dark Brown Sugar
  • 3 Eggs
  • 100g Plain Flour
  • 50g Cocoa Powder
  • 3 Mince Pies

Icing

  1. 50g White Chocolate
  2. 25g Double Cream

Method

  1. Pre-heat the oven to 160°C and line a square baking dish with greaseproof paper
  2. Melt the chocolate and butter in a bain-marie (bowl set over a pan of steaming water)
  3. Whisk the eggs and sugar for 5-8 minutes until mousse like
  4. Fold through the melted chocolate
  5. Fold through the flour and cocoa powder
  6. Add the brownie mix to the lined baking dish
  7. Quarter the mince pies and add to the top of the brownies
  8. Bake in the oven for 25 minutes until cooked on the top but a slight wobble still as it comes out of the oven
  9. Heat the cream in a small sauce pan; once the cream is hot, stir in the white chocolate
  10. When the brownies are cool, drizzle with the white chocolate ganacheover them
