Natural Yogurt, Spinach and Horseradish Dip

A delicious healthy dip perfect to serve with smoked fish, toasted pitta bread, or as a sauce for a pasta salad.

Ingredients

200g spinach leaves

Knob of unsalted butter

250ml natural yogurt

Spoonful of hot horseradish sauce

400g of smoked trout

Mixed salad leaves

4 wedges of lemon

Method

  1. Wash the spinach thoroughly and spin it dry in a salad spinner.
  2. Place the knob of butter into a pan and allow to melt. Add in the spinach and season with a little salt. Cook the spinach for about 2-3 minutes.
  3. Add the contents of the pan into a small measuring jug and blend with a hand-held blender until nice and smooth. Allow the puree to cool.
  4. Mix the cooled spinach puree in a bowl with the yogurt and horseradish sauce. Add a little more seasoning if required.
  5. Serve in a nice small dish on a wooden board and garnish the rest of the board with the smoked trout, salad and wedges of lemon.
