Root Vegetable Fries

The perfect accompaniment to a juicy Yeo Valley Organic Beef Steak or Lamb burger.
Ingredients
2 large parsnips, peeled
2 large carrots, peeled
2 beetroots, peeled
2 tablespoons extra virgin olive oil
2 tablespoons of cornstarch
½ teaspoon sea salt
½ teaspoon cracked black pepper
½ teaspoon paprika
Method
1. Preheat oven to 190 degrees. Line a baking sheet with parchment paper.
2. Cut parsnips, carrots and beets into 1cm thick strips, resembling French fries.
3. Toss the cut vegetables in oil, cornstarch and seasonings and arrange them into a single layer on the baking sheet.
4. Bake at 190 degrees for about 20-30 minutes, turning them once with a spatula halfway through the cooking time, until they are golden brown and crispy.
5. Serve with your favourite burger.
