Yeo Valley Organic Madagascan Vanilla Ice Cream, topped with Sesame Brittle

Creamy, classic and just a little bit fancy. Our Madagascan Vanilla Ice Cream is topped with shards of golden sesame brittle for the perfect mix of smooth and crunchy.

Ingredients

3 tbsp white sesame seeds

3 tbsp black sesame seeds

Pinch of flaky sea salt

200g golden caster sugar

Yeo Valley Organic Madagascan Vanilla Ice Cream

Extra virgin olive oil for serving

Method

1. Add golden caster sugar to a bowl, leave without stirring until the sugar has melted.

2. Take off the heat and add in sesame seeds and salt, then stir to mix.

3. Pour this mixture onto the baking tray and spread evenly. Allow to cool in the fridge for an hour.

4. Make sure the brittle is cool before breaking it into small pieces.

5. Scoop your ice cream and sprinkle with the sesame brittle and a drizzle of olive oil.
