Mango Chia Jam Yogurt Pots

These little breakfast pots are great for prepping ahead and make a delicious, fibre-packed breakfast. Along with our Natural Kefir, it’s the perfect gut-loving start to the day.
Ingredients
350g Yeo Valley Organic Natural Kefir Yogurt
3 passion fruits
300g frozen mango chunks
1 tbsp chia seeds
Yeo Valley Organic Toasted Nuts and Seeds Granola
*(Or you can make your own toasted oats)
100g oats
40g mixed seeds
30g desiccated coconut
*(To make your own toasted oats, warm a pan over a medium heat, add a generous knob of butter and a teaspoon of honey, add your oats, seeds and coconut to the pan and toss for 4-5 minutes until toasted and golden).
Method
1. Put your frozen mango into a saucepan over a low to medium heat, add a splash of water and cook for 15-20 minutes until soft and falling apart. If needed, you can slightly crush the mango pieces with the back of a fork.
2. Turn off the heat and stir through 2 of the passion fruits. Add your chia seeds and allow 5-10 minutes to thicken, giving the occasional stir.
3. In 4 glass jars layer the mango and passion fruit compote, granola and yogurt. Top with a little sprinkle of granola and the rest of the passion fruit.
