Apple and Berry Breakfast Crumble

If you’re looking for something a bit different to kick off your day, this low-sugar breakfast crumble is a great option. Served with our delicious Greek Style yogurt, it is certain to be a crowd pleaser.
Ingredients
400g Mixed frozen berries
2 small apples or 1 large apple peeled, cored and diced
1 tbsp chia seeds
Juice of half a lemon
Crumble topping:
120g jumbo organic oats
2 eggs whites (medium)
50 g melted Yeo Valley Organic unsalted butter
2 tsp honey (as optional sweetener)
1 tsp ground cinnamon
30g Flaked almonds
30g Mixed seeds
20g Flaxseeds
Serve with Yeo Valley Organic Greek Style Yogurt
Method
1. Heat the oven to 180 degrees. In a baking dish, pour your frozen berries and diced apple. Sprinkle over your chia seeds and a squeeze of fresh lemon before mixing well together.
2. To make the topping, start by melting your butter, then set aside to cool while you combine your oats, flaked almonds, seeds and cinnamon in another bowl. Pour your butter and egg whites over the oat mixture (and honey if using) and mix well.
Tip the mixture over the fruit, but avoid pressing down as it's nice if it has clumps and you can see the fruit through. Cook in the oven for 30-40 minutes until golden, crisp and bubbling.
3. Serve with the Yeo Valley Greek Style Yogurt. This also makes great leftovers or can be packed up and taken on the go.
