Tropical Mini Pavlovas with Strawberry yogurt, mango and mint

A tropical twist on a traditional pavlova recipe - even better, they're mini!
Ingredients
4 egg whites
220g caster sugar
300g Yeo Valley Organic Strawberry yogurt
100g fresh strawberries, halved
1 ripe mango, diced
Fresh mint leaves, to garnish
Method
1. Preheat oven to 150C and line 2 baking trays with baking paper.
2. Place the eggs white into a bowl and beat with an electric whisk until soft peaks form.
3. Gradually add caster sugar, beating well between each addition.
4. Beat until mixture is thick and glossy, taking around 5 mins.
5. Spoon heaped teaspoons or pipe swirls of the mixture onto a baking tray.
6. Flatten the meringue into disks and bake for 20-25 minutes until crisp.
7. Cool completely in the oven with the door ajar.
8. Once cool, top with spoonfuls of Yeo Valley Organic strawberry yogurt.
9. Sprinkle on top fresh strawberries and mango, with fresh mint to garnish.
