Blackcurrant frozen bark, with nut butter and blackberries

Warning: these won't last long. These quick and easy frozen snacks are perfect summer snack.

Ingredients

350g Blackberries

1 tsp vanilla bean paste

2 tbsp honey

2 tbsp chia seeds

450g Yeo Valley Organic Blackcurrant yogurt

4 tsp nut butter (we love almond)

Method

1. Put 250g blackberries in a pan with the vanilla and honey, then cook over a low heat for 3-5 mins until berries are broken down.

2. Stir through the chia seeds and cook for 10 mins. Set aside to cool completely (it will thicken as it cools)

3. Line a 20cm x 30xm baking tray with a sheet of greaseproof paper. Spread the yogurt across the baking tray.

4. Once cooled, dollop over the blackberry chia jam randomly across the yogurt.

5. Swirl your nut butter randomly over the yogurt and jam.

6. Cut the remaining berries in half, scatter them over the yogurt.

7. Freeze for at least 4 hours, or until firm, then snap the bark into pieces and serve.
