
Cranberry Oat Bars
This is a lovely little tea-time snack that’s mixed and out of the oven in just half an hour – another good one for your children to try.
Ingredients
160g plain flour
160g oats
1 tsp ground cinnamon
1tsp mixed spice
80g melted Butter
4 tbsp orange juice
80g Demerara sugar
1 tbsp baking powder
1 tsp salt
For the topping:
150g Greek Style Natural yogurt
30g caster sugar
1 egg white (beaten)
50g cranberry sauce
Method
- Mix together the flour, oats, Demerara sugar, baking powder, salt and spices in a bowl, then stir in the melted butter and orange juice. Keep about 100g of this mixture to one side.
- Line a 12×6 brownie tin with greaseproof paper and press the mixture into the bottom – make sure it’s snugly into the corners.
- Mix the Greek Style yogurt, egg white, cranberry sauce and sugar together in a bowl, then spread it over the oats in the tin. Sprinkle over the 100g of oat mix you kept back and pop it into the oven at 180C/gas mark 4 for about 15 minutes, or until the edges are golden brown.
- Transfer to a wire rack to cool, then remove from the tin and slice it into bar sizes. Lovely with a cup of coffee, or a glass of milk if you’re a bit smaller.
