Ginger & Spiced Poached Peaches
Add to your yogurt for a tasty breakfast.
Ingredients
4 ripe peaches
100g sugar
50g fresh ginger
1 cinnamon stick
2 star anise
500ml water
50g whole almonds, toasted
Raspberries and fresh mint to garnish
Method
- Place the sugar into a pan along with the sliced ginger, star anise, cinnamon and water then bring to boil and simmer until the sugar has all dissolved.
- Cut the peaches in half and twist to separate the halves. De-stone and cut each peach half into quarters so that you end up with each peach yielding 8 segments.
- Place into the simmering syrup and simmer for 2-3 minutes until the peaches are nice and tender.
- Allow to cool and marinate in the syrup, then top with the almonds, raspberries and mint.
