Ginger & Spiced Poached Peaches

Add to your yogurt for a tasty breakfast.

4 ripe peaches
100g sugar
50g fresh ginger
1 cinnamon stick
2 star anise
500ml water
50g whole almonds, toasted
Raspberries and fresh mint to garnish


  1. Place the sugar into a pan along with the sliced ginger, star anise, cinnamon and water then bring to boil and simmer until the sugar has all dissolved.
  2. Cut the peaches in half and twist to separate the halves. De-stone and cut each peach half into quarters so that you end up with each peach yielding 8 segments.
  3. Place into the simmering syrup and simmer for 2-3 minutes until the peaches are nice and tender.
  4. Allow to cool and marinate in the syrup, then top with the almonds, raspberries and mint.
