Lemon and Thyme Cake

If you like Lemon cake, try this one with a twist. We think  you’ll come back to this cake ‘thyme’ and ‘thyme’ again!

200g butter
200g caster sugar
4 eggs

100g plain flour
1 tsp baking powder
100g ground almonds
1 lemon (zested)
5g fresh thyme leaves

50g sugar
2 lemons (juiced)
Pinch of fresh thyme leaves


1. Cream butter and sugar and then gradually add beaten eggs.

2. Next fold in the sifted flour and baking powder followed by the almonds, lemon zest and thyme.

3. Pour into a greased tin and bake at 160C for 40 minutes. Whilst the cake is cooking, make the topping by adding the lemon juice and sugar to a pan. Bring to boil and then once boiled, removed from the stove. Add in the thyme leaves.

4. When it is ready and comes out of the oven put a skewer through the cake several times then pour over the topping mixture.

5. Serve with Greek Style Natural Yogurt.
