LOVE DAY Jammy Dodgers
Delicious is at the hea… Wait NO! Jam, is at the heart of these of these divine dodgers. Made to celebrate the launch of our first TV advertisement in over 10 years, a big batch of these sweet treats offers the perfect way to spread the LOVE!
Ingredients
Biscuit:
- 115g Yeo Valley Organic Unsalted Butter
- 60g Icing sugar
- 1 drop of Vanilla essence
- 1 Egg Yolk
- 150g Soft flour
Buttercream:
- 100g Icing Sugar
- 50g Yeo Valley Organic Unsalted Butter
- 1 drop Vanilla essence
Jam filling:
- 200g Organic strawberry jam
Method
- Cream Butter, Icing sugar, and Vanilla together until pale and fluffy.
- Beat in egg yolks, then mix in flour until a dough is formed
- Divide the dough into 4, then flatten in clingfilm and place in the fridge for 20 minutes to chill
- Once chilled roll between two sheets of greaseproof paper to a thickness of approx 5mm and cut into desired shape (we recommend a heart)
- Remember to cut a smaller heart shape out of 1/2 of the biscuits so you can see the Jam once you construct the Dodger
- Place on a baking tray lined with a silicone baking sheet and chill again for a further 30 minutes
- Once Chilled bake at 170 c. for approximately 7 minutes.
- Once the biscuits are baked and have cooled begin to assemble the Jammy Dodger
- Make the butter cream by beating the icing sugar, butter and, vanilla essence together
- Once mixed and smooth place into a piping bag and pipe the buttercream around the edge of the base biscuit (the one without the heart cut out)
- Beat the Jam until smooth and fill the centre of the base biscuit with the Jam.
- Then place the top biscuit (the one with the heart cut out) on top so you only see the Jam.
- Finally serve and enjoy!
