Noodle Salad with a Thai Peanut Yogurt Dressing

Take a flavour trip with this Thai Peanut Yogurt dressing served with an oriental Noodle Salad. Creamy, nutty, and tangy vibes that turn every forkful into a delicious journey of yum.

Ingredients

The Dressing

  • 100g Manilife Organic Smooth Peanut Butter
  • 100ml Yeo Valley Drinking Kefir
  • 2 tbsp Rice Wine Vinegar
  • 2 tbsp Tamari
  • 2 tbsp Honey
  • 1 Lime
  • 1 tbsp Fresh Ginger (chopped)
  • 1 tsp Siracha
  • 1 Garlic Clove (crushed)
  • Optional: 1 tbsp fish sauce

The Salad

  • 150g Brown Rice Noodles
  • 2 tbsp Sesame Oil
  •  ¼ Red cabbage (shredded)
  • 1 red pepper (diced)
  • 2 carrot (grated or strips)
  •  ¼ cucumber (diced)
  • 4 spring onions (sliced)
  • 100g Cherry tomato (sliced)
  • 15g Coriander (chopped)
  • 20g Peanuts (chopped)

Method

  1. Combine and whisk all of the dressing ingredients together in a small mixing bowl.
  2. Soak the noodles for 10 minutes in boiling water. Drain the noodles and toss in sesame oil.
  3. Add all of the noodle salad ingredients and the dressing to a large mixing bowl and toss to combine them.
