Noodle Salad with a Thai Peanut Yogurt Dressing
Take a flavour trip with this Thai Peanut Yogurt dressing served with an oriental Noodle Salad. Creamy, nutty, and tangy vibes that turn every forkful into a delicious journey of yum.
Ingredients
The Dressing
- 100g Manilife Organic Smooth Peanut Butter
- 100ml Yeo Valley Drinking Kefir
- 2 tbsp Rice Wine Vinegar
- 2 tbsp Tamari
- 2 tbsp Honey
- 1 Lime
- 1 tbsp Fresh Ginger (chopped)
- 1 tsp Siracha
- 1 Garlic Clove (crushed)
- Optional: 1 tbsp fish sauce
The Salad
- 150g Brown Rice Noodles
- 2 tbsp Sesame Oil
- ¼ Red cabbage (shredded)
- 1 red pepper (diced)
- 2 carrot (grated or strips)
- ¼ cucumber (diced)
- 4 spring onions (sliced)
- 100g Cherry tomato (sliced)
- 15g Coriander (chopped)
- 20g Peanuts (chopped)
Method
- Combine and whisk all of the dressing ingredients together in a small mixing bowl.
- Soak the noodles for 10 minutes in boiling water. Drain the noodles and toss in sesame oil.
- Add all of the noodle salad ingredients and the dressing to a large mixing bowl and toss to combine them.
