Lemon Curd

You know how there are some combinations that just work perfectly, like scones and jam, or tea and buttered toast? Well this is another one.

There’s something wonderful about the creaminess of the whole milk yogurt and the sweetness of the lemon curd coming together in this recipe.

This Lemon Curd Yoghurt is devine. The creaminess of the yoghurt offsets the tangy sweetness of the lemon curd perfectly.

I make a dessert by putting crumbed digestives mixed with butter into a sundae dish, then layers of lemon yoghurt with blueberries and finishing with blueberries on top. Needs to be made just before serving or the biscuits go soggy. Delicious.
