
Potato Salad
Ingredients
500g cooked Jersey Royals
100g Yeo Valley Natural Kefir Yogurt
30g chopped chives
50g spring onions
50g basic vinaigrette
Salt and pepper
Pea shoots
Method
1.Cut the potatoes into small sized pieces. and place in a large bowl.
2.Add the yogurt, vinaigrette and half of the chives and spring onions and mix well. Season with Salt and Pepper.
3.Place into a serving bowl and sprinkle the rest of the other ingredients over, then garnish with the pea shoots to give a real seasonal feel and serve.
